I love making breakfast and brunch; I have a whole Pinterest board dedicated to it (yes, so it’s serious). If I could fit a lavish brunch into my life every morning I think life would be a lot easier. But unfortunately as a full-time student and part-time worker that leaves quite a small amount of time to my morning meals.
Breakfast IS the most important meal of the day and I notice how sluggish and tired my body feels when I don’t give it what it wants.
Over the past week I’ve made breakfast; all yummy, all different, and all easy for busy students like you and I.
Monday – Baked Brown Sugar Peaches
Right? I have your attention already, don’t I? I got this recipe straight from Pinterest. It takes 30 minutes to bake so I let them cook while I got ready. This isn’t on-the-go but it won’t take you long to finish these.
Tuesday – Egg ‘n Toast
Hi, my name is Kay and I am addicted to Avocados. Yes, I love them. I could eat them every day at every meal. I mean they come in their own bowl! What more do you need?? /RANT
I normally hard-boil a few eggs on Sunday night so I can grab them when I need a quick snack. I cook my eggs for about 12-15 minutes and they’re perfect.
The avocado toast is just bread toasted to your liking topped with mashed avocado, just a half is all you’ll need. I love mine topped with red pepper flakes!
This protein-packed start to your day is sure to hold you up until lunch.
Wednesday – Oatmeal
I wasn’t a huge fan of oatmeal until I made it myself about a month ago. It’s great to make all year but I’m especially excited to make it for those winter mornings I’ve been dying for. Fortunately, I have a crockpot so I can just cook it over night.
I highly recommend this recipe I found last week. I love how they suggested adding nutmeg! I always add banana slices too. Mmmmm! If you don’t have a crockpot, fear not. There are recipes for stove top that don’t take long at all.
I was so hungry I forgot to take the pictures for this one…so let’s just keep it moving.
Thursday – Sweet Potato Hash
This is the day I’m most excited about because sweet potatoes just make me happy. I tend to use any vegetables I have and I didn’t follow a recipe for this particularly, but mine was similar to this.
Since I only had orange and yellow bell peppers to add mine was minimal, but that’s where sriracha comes in to kick it up a notch. Yes, it makes everything taste better. Just take my word for it.
Friday – The [Saturday] Morning Classic
I’m ending the week SUPER easy. I don’t have class on Fridays so I just ran back upstairs with my bowl and turned on Netflix.
This is Great Grains with raisins, dates, and pecans vanilla almond milk topped with bananas and cinnamon.
